Production process
The vinification of Fossati Dolcetto is similar to that of San Lorenzo, directed towards capturing the fruity character of the grape variety.

Serving recommendations
The structure of the wine from this vineyard is generally inferior, in the same years, to San Lorenzo. It offers an intriguing, slightly bitter aftertaste (bitter almond) with the deep purple typical of Dolcetto in this area. Dolcetto is an “everyday table-wine,” much loved by local piemontesi. It is a good accompaniment to Piedmont cuisine from appetizers to dessert. It may be cellared for a few years, although too much time will fade its best quality…. youthful freshness.
