Morphologische Bodenbeschaffenheit
Die geologisch charakteristische Beschaffenheit des großteils dieses Weinberges ist der sogenannte SANDSTEIN VON DIANO, entstanden aus trüben submarinen Strömungen des mittleren Miozän-Zeitalters. Dieser Boden ist sandiger als jener der Cannubilagen und bringt einen Wein mit guter Struktur hervor, der jedoch eine gewisse Zeit braucht ehe er als ausgewogen bezeichnet werden kann. Deshalb empfiehlt es sich diesen Wein erst ab 6 Jahren nach der Weinlese – bei guten Jahrgängen auch später – zu genießen.
Kelterungsmethode
Die Kelterung entspricht, wie bei all unseren Weinen, jener der Handverlesung welche die Traube in Ihrer Qualität bis in die Flasche begleitet. Wir erhalten so einen Rebsortenwein, den wir auf seinem Weg zur Reife begleiten und der seinen Charakter voll entfalten kann. Nur in den qualitativ guten Jahrgängen werden die Castellero-Trauben getrennt gekeltert und zum Lagenwein ausgebaut. In den weniger guten Jahrgängen werden sie gemeinsam mit den Nebbiolo-Trauben der anderen Weinbergzonen gekeltert, was den Barolo ohne Lagenangabe ergibt.
Genusserlebnis – Kombination
Bei Lagerung der Barolo Lagenweine in einem geeigneten Keller, empfiehlt es sich die Spitzenjahrgänge nicht vor dem 6. Jahr nach der Weinlese zu trinken, da vorher die Vielfalt der an reifen Rotweinen geschätzten Aromen nicht voll entwickelt ist. Serviert sollte der Barolo bei einer optimalen Temperatur von 16 – 18°C werden, wobei ein junger Barolo direkt in Gläsern serviert werden kann, ein mehr als 15 Jahre alter Barolo hingegen 2 – 3 Stunden vorher geöffnet werden sollte und mindestens die Menge eines Glases der Flasche entnommen werden sollte, um ausreichend Zeit und die nötige Oberflächengröße zur Sauerstoffaufnahme (Atmung) des Weines zu schaffen. Bei mehr als 20 jährigen Barolo-Weinen empfiehlt es sich diese mindestens 15 Minuten vor dem Genuss über einer Kerzenflamme zu dekantieren, damit eventuell in den Jahren entstandene Ablagerungen in der Flasche belassen werden können. Als ideale Speisenkombination bietet sich rotes Fleisch, Wild und Käse an. Barolo Wein empfiehlt sich aber auch als Menübegleiter beginnend mit einem jungen (weicheren) Barolo um dann zu älteren, charakterstärkeren Barolo-Weinen überzugehen.

92 Quelli di Brezza sono vini classici nel senso più nobile del termine. Termine che è ancora più nobile, poi, se i vini in questione sono dei Barolo. E' sempre molto buono il Sarmassa, ma quest'anno spicca il Castellero, che ha già raggiunto un buon equilibrio. Nel bicchiere è di colore granato, con lampi rubino. Annusando si avverte un velo speziato che subito lascia spazio a note floreali di geranio, rosa e viola. A seguire, la frutta, con in primo piano la ciliegia mista a fragolina di bosco, e un ricordo di liquirizia. In bocca attacca senza invadenza eppure con decisione. Il liquido accarezza lingua e palato grazie alla maturità dei tannini e alla misurata componente alcolica. Eleganza da vendere e lunga persistenza del gusto. |
