Sistema di vinificazione
La vinificazione viene effettuata nel rispetto della freschezza e dell’eleganza del vino. La fermentazione con macerazione dura dai 6 ai 8 giorni poi il vino ancora velato viene mantenuto ad una temperatura di 18-20° C circa per favorire la malolattica. Nel mese di Dicembre si passa allo stoccaggio in botte di rovere per circa un anno. Successivamente permarrà per un periodo di uguale durata in bottiglia per l’affinamento dei profumi.
Questo vino così ottenuto é generalmente già pronto per il consumo.
Come consumarlo
Per scelta aziendale ma ancor più per le caratteristiche pedo-climatiche con cui la vite deve interagire, si presenta con profumi primari (fruttati: pesca, frutti di bosco), di medio corpo, relativamente di pronta beva. Si adatta all’abbinamento con menù estivi meno elaborati. Regge bene anche un certo invecchiamento anche se è preferibile un consumo relativamente giovane.
