Caratteristiche morfologiche del terreno
Le caratteristiche geologiche che maggiormente caratterizzano questo vigneto sono le cosiddette ARENARIE DI DIANO, originatesi nell’Elveziano da correnti di torbido sottomarine. Questo terreno si presenta più sabbioso dei Cannubi e dà un vino di buona struttura non sempre equilibrato, soprattutto quando è ancora giovane. È infatti consigliato per il consumo dal sesto anno in avanti nelle grandi vendemmie.
Sistema di vinificazione
Lo stile di vinificazione, come per tutti i nostri vini, è quello di una mano leggera che tende ad accompagnare l’uva sino alla bottiglia. Riteniamo infatti che un vino, soprattutto da monovitigno, sia un’opera unica e irripetibile e come un figlio va accompagnato nella sua crescita senza forzature, perché possa così mettere in evidenza la propria personalità. Le uve suddette vengono vinificate a parte soltanto nelle annate che risultano di buon livello qualitativo. Diversamente, negli anni meno fortunati, concorrono assemblate a uve Nebbiolo provenienti da altre sottozone alla produzione del Barolo senza indicazione del vigneto.
Come consumarlo
Se si ha una buona cantina di stoccaggio, nelle annate eccezionali, sarebbe meglio non bere prima del sesto anno dopo la vendemmia i Barolo provenienti dalle MeGA (Castellero, Cannubi e Sarmassa), poichè in tal caso si perderà tutta quell’ampiezza di profumi che hanno origine dall’affinamento in bottiglia e tanto apprezzati nei grandi rossi da invecchiamento.
La temperatura di servizio può variare dai 16 ai 18°C se il Barolo è giovane; si consiglia la mescita in ampi bicchieri direttamente dalla bottiglia; se il vino ha più di quindici anni di invecchiamento, sarebbe meglio aprire la bottiglia 2 o 3 ore prima e toglierne almeno un bicchiere, per permettere una buona ossigenazione.
I Barolo superiori ai vent’anni, con l’ausilio di una candela per controllarne la limpidezza, vanno decantati in caraffa, lasciando in bottiglia gli eventuali depositi che si fossero formati durante l’invecchiamento. Questa operazione dovrà precedere di almeno 15 minuti il consumo. Per quanto riguarda gli abbinamenti, sono molto indicate carni rosse, selvaggina e formaggi, non disegnando però, se la cena è in grande stile, l’abbinamento a tutto pasto, partendo da Barolo più giovani (di minor austerità) per giungere poi ai Barolo più invecchiati e di grande carattere

93 (organic) The wine has a pale ruby color. The nose offers tension, a certain density and a savory spiciness. It opens with notes of nutmeg, licorice, crushed coriander seed, as well as delicate herbal aromas (crushed wild mint, cut thyme, fresh rosemary, fresh tobacco, black tea) and a fragrant and expressive floral bouquet (violet, wild rose, peony). The fruit is elegant and airy - we find notes of bigarreau cherry, morello cherry, blackcurrant, blueberry, raspberry and cranberry, combined with notes of cocoa nibs, mint chocolate and toasted hazelnut in the background. The palate is straight, precise, with a tangy and slightly bitter attack (cranberries, bergamot). We then find notes of raspberry, red cherry, blueberry and blackcurrant, combined with a delicate herbaceous touch (black tea, dried mint, a hint of tobacco and blackcurrant leaf), with chocolatey and roasted touches (cocoa nibs, coffee, toasted hazelnut). The finish is expressive, tangy and sapid, with flavors of tangy fruits (cranberries, red cherry, blackcurrant), as well as a menthol (sweet wild mint) and mineral framework, combined with a smoky and slightly bitter touch. Se già ben conosciuti per i Barolo delle MGA Cannubi e Sarmassa, con la 2013 ci hanno sorpreso con questo Castellero. Un vino che profuma della tradizione più pura: rose, sottobosco, composta di fragole, liquirizia, corteccia, erbe officinali e caffè. Il 2013 si è distinto come un anno classico per la Langa e il palato di questo vino ne rappresenta appieno il carattere: fresco e sapido, dal tannino giustamente marcato e una elegante armonia. 92 Quelli di Brezza sono vini classici nel senso più nobile del termine. Termine che è ancora più nobile, poi, se i vini in questione sono dei Barolo. E' sempre molto buono il Sarmassa, ma quest'anno spicca il Castellero, che ha già raggiunto un buon equilibrio. Nel bicchiere è di colore granato, con lampi rubino. Annusando si avverte un velo speziato che subito lascia spazio a note floreali di geranio, rosa e viola. A seguire, la frutta, con in primo piano la ciliegia mista a fragolina di bosco, e un ricordo di liquirizia. In bocca attacca senza invadenza eppure con decisione. Il liquido accarezza lingua e palato grazie alla maturità dei tannini e alla misurata componente alcolica. Eleganza da vendere e lunga persistenza del gusto. |
